Preparation
Boil the pineapple with the rice in 2 liters of water, add the pinch of salt; boil until the rice is very soft (approximately 20 minutes).
Wait until it cools, and blend well. Pass through the strainer, add the vanilla extract, sweeten to taste. Serve very cold.
