Preparation

Separate the yolks and whites of the Huevo San Juan® pieces into two different bowls. Reservation.
For the cake, beat the Huevo San Juan® yolks with the sugar until doubled in size and set aside; then beat the San Juan® Egg whites with the sugar until double in size and mix with the previous mixture. Add the sifted flour little by little in an enveloping way and add the melted butter.
Spread on a tray with waxed paper, use a spatula to spread the dough. Bake at 180 ° C, for 10 minutes; Remember not to open the oven while the cake is cooking.
Remove from the oven, spread a dry cotton cloth with icing sugar and turn the cake, remove the waxed paper and quickly roll the cake by wrapping it with the cloth while it is still hot, let it rest rolled until it cools. This will make the cake flexible.
In a bowl, place the cream cheese, season with salt, pepper and oregano to taste; Mix with the help of a balloon whisk and spoon until you get a creamy consistency. Reservation.
Unroll the cake roll, with a spatula cover with the cream cheese mixture; Place a layer of slices of ham, a layer of slices of cheese and repeat with ham until covered; Roll up again using the cotton cloth. Let stand a moment.
Cut the roll into slices with the help of a serrated knife. Garnish with thyme, enjoy.
