We clean and cut the chicken wings well (in case they are not pre-cut). We salt them. We place them in a deep container and pour a generous splash of vinegar, a splash of soy sauce, and the rest of the water until they are covered. We add a handful of oregano to the container and let them rest for at least 30 minutes.
