When you have a craving for a healthy and light snack, you can prepare this recipe for Easy Vietnamese Rolls. These rolls made with rice leaves are nutritious, since you can prepare them with salad and chipotle shrimp.

This easy recipe can also be a great option if you are vegetarian, since you can make them with just fruits and vegetables and accompany them with ponzu sauce, to give them more flavor.

Ingredients

4 portions
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger, finely chopped
  • 300 grams shrimp, small, clean, without peel and cut alongside in half
  • 2 tablespoons Chile chipotle milled
  • enough salt and pepper
  • enough Water, hot
  • 8 leaves of rice
  • 1 cup rice noodles, cooked and drained
  • 1 bag Freshly by Eva, 420 G Coleslaw salad
  • 1 avocado, cut into slices
  • 1/4 cups fresh coriander
  • enough sauce, ponzu, to serve

Preparation

In a pan over medium heat, heat the sesame oil and cook the ginger and shrimp until they change color, add the ground chipotle, salt and pepper. Cook 1 more minute, remove and cool.
Soak the rice leaves in hot water until they soften. Drain
In a table, place one of the rice leaves and arrange the shrimp. Add the rice noodles, a little of the Coleslaw Freshly Salad by Eva®, the avocado, the cilantro and a few drops of the sweet dressing of the salad. Roll up
Cut the rolls in half and accompany with ponzu.
