  • 3/4 kilos ground lamb
  • 3/4 kilos ground duck meat
  • 1 cup onion, finely chopped
  • 10 tablespoons ground bread
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoons paprika
  • 3 cloves garlic
  • 2 eggs
  • 1/8 teaspoons saffron
  • 2 tablespoons olive oil
  • 1/4 tablespoons sumac, plant
  • 1/2 cups greek yogurt, or natural yogurt
  • 2 tablespoons fresh coriander, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoons piquín chili, powdered


Preheat a grill.
In a deep bowl mix the onion, the ground bread, the salt, the pepper, the paprika, the garlic, the eggs and the meat of turkey and lamb. Mix with your hands for 5 minutes.
Divide the mixture into 40 equal portions and you have balls with each portion.
Place 4 balls on each wooden stick (you will have 10 skewers).
In a pan over medium heat cook the saffron for 30 seconds or until it begins to release its aroma. Remove from heat and crush. Mix in a small bowl with the olive oil.
Place the skewers on the grill (you can grease them with vegetable spray so they do not stick) and cook for 10 minutes (5 minutes on each side). Remove and place in a dish.
Cover the cooked meat with the mixture of oil and saffron and sprinkle with the Sumac.
In a deep bowl mix yogurt, cilantro, lemon juice, honey and chili. Serve with skewers.


Serve the skewers accompanied by yogurt sauce for people to serve.


The sumac can be found in Arab or Mediterranean stores.
