This rich recipe of phyllo pasta stuffed with cheese is ideal as a snack or for breakfast.

Ingredients

10 portions
  • 450 grams phyllo pasta, thawed
  • 1 cup butter, melted
  • 3 eggs
  • 1 cup feta cheese
  • 1 cup manchego cheese, grated
  • to taste black pepper, to taste

Preparation

Mix in a deep bowl 2 eggs, feta cheese, Manchego cheese, and pepper to taste.
Preheat the oven to 180 degrees centigrade.
Prepare 2 cookie baking sheets, greasing them with a little of the melted butter.
Take 1 phyllo leaf (keep the rest of the phyllo pasta under a damp cloth so it does not dry) and cut it into strips of approx. 10 cm wide.
With a pastry brush, varnish the butter with butter and fold it in half. Re-varnish with butter and place a spoonful of cheese filling at the end of the strip.
Fold the strip in half to make a triangle (like the photo) and place it on the tray. Repeat with all the rows.
Bake for 20 minutes or until lightly browned, remove from oven and serve.

PRESENTATION

Serve hot.

TIPS

You can try different fillings with the rows adding spinach, eggplant and other cheeses.
