Ingredients

4 portions
  • 100 grams pasilla chili pepper
  • 50 grams green tomato
  • 1 onion
  • 1 tablespoon vegetable shortening
  • 2 cloves garlic
  • salt
  • 200 grams panela cheese

Preparation

Roast chiles and green tomatoes in a comal or pan.
Once roasted, open, devein and put to soak in a little water with salt.
Once roasted, they are liquefied together with the garlic and onion.
In a saucepan put the butter to melt, when it is already hot, empty what was liquefied there.
Cut thick slices of cheese (approximately 5 cm thick) and add them to the sauce.
When it boils, turn off the fire and stir a little to integrate everything.

TIPS

It can be made with fresh or aged cheese.
