Ingredients

4 portions
  • 1 clove garlic, chopped
  • 1/3 tablespoons thyme
  • 1/3 red onions, chopped
  • 1 teaspoon sea salt
  • 1 teaspoon pimientón
  • 3 tablespoons olive oil
  • 4 portobello mushrooms, big
  • 2 cups goat cheese, fallen apart
  • aromatic herbs
  • 1 teaspoon table salt
  • 1 teaspoon small black pepper
  • 4 leaves french lettuce, or Italian
  • 4 slices red tomato, thick, poached
  • 4 branches thyme, or marjoram

Preparation

Crush the ingredients of the marinade in a mortar and pestle, adding the oil little by little. Reserve in a bowl.
Make a horizontal cut in each fungus.
Add salt, pepper and herbs.
Varnish the outer part of the mushrooms with the marinade and cook them in the frying pan or the griddle.
Mix the goat cheese with the rest of the marinade and fill the mushrooms.
