Prepare these Mexican Sopes. It is an easy recipe that you can make for breakfast or as a snack. For this recipe you can make the dough from the beginning and hydrate it or buy the sopes ready to fill. The good thing about these sopes is that you can fill them with your favorite ingredients.

You can make a healthy version based on nopales instead of corn masa.

Ingredients

20 servings
  • 4 cups of Maseca flour mix
  • 2 1/2 cups of Water
  • 1/2 teaspoonful of Salt
  • 1 1/2 cups of refried beans
  • 1 1/2 cups of chicken shredding
  • 1 Cup of cottage cheese
  • 1 Cup of Romaine lettuce chopped
  • 1 Cup of green sauce
  • vegetable oils

    Preparation

    Mix the maseca, water and salt. Knead until the dough hits.
    Divide into 20 portions and flatten to make thick tortillas. With your fingers lift the edges of each sope.
    Heat a comal and cook the sopes on each side about 1 minute or until lightly browned.
    I fry the sopes with a little vegetable oil placed on absorbent paper towels.
    Fill each sope with beans, shredded chicken, cheese, lettuce and a little green sauce.
