Prepare these delicious Quesadillas de Flor de Calabaza, a Mexican recipe that is very easy to cook. The pumpkin flower is typical in the rainy months, although it can be obtained during a great part of the year.

These Pumpkin Flower Quesadillas are made with tortillas cooked at the moment, for them you do not need an omelette machine, only a press and a plastic bag cut in half.

Ingredients

6 portions
  • 1/2 kilos flour tortilla
  • 4 bunches pumpkin flower
  • 300 grams Oaxaca cheese
  • 2 cloves garlic
  • 1/2 onions, chopped
  • 2 tablespoons vegetable oil
  • pepper

Preparation

Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
Add half of the onion and garlic and brown for 2-3 minutes. Add the pumpkin flower and cook for 5 minutes or until well cooked. Season with salt and pepper and pour into a deep dish.
With a tortilla you have tortillas with tortilla dough.
Fill the tortillas with a bit of Oaxacan cheese and pumpkin flower filling. Seal the quesadilla well with your fingers.
Cook the quesadillas either in a comal (if you want them without fat) or in oil if you prefer fried.

PRESENTATION

Serve hot quesadillas accompanied by a green or red sauce.
