The classic shrimp acapulco ceviche. This recipe is the traditional one found throughout Acapulco.

Ingredients

4 portions
  • 1 kilo shrimp, medium peeled and deveined
  • 4 tomatoes, seedless and chopped
  • 2 onions, chopped
  • 1 bunch fresh coriander, chopped
  • 10 lemons, its juice
  • 1 serrano pepper, chopped
  • 1/4 cups ketchup
  • 1/4 cups Orange soda
  • 1 avocado
  • 1/4 cups pitted olive

Preparation

Marinade the shrimp in the juice of 5 lemons, cover and refrigerate for 1 hour before preparing the ceviche.
Wash the shrimp marinated in lemon and place in a deep bowl.
Add the tomato, onion, cilantro, olives and serrano pepper to the shrimp.
Add the juice of the remaining 5 lemons, the ketchup and the orange soda. Mix well and season with salt to taste.
Refrigerate for at least 20 minutes before serving. When serving add slices of avocado.

PRESENTATION

Serve in individual martini glasses and served with crackers.
