Cod to the Vizcaina Casero

This recipe for cod in Biscay is very popular during the Christmas season; however you can prepare it in any season of the year. Its rich flavor is perfect to enjoy with the family.

Ingredients

  • 1 kilo of cod Norwegian
  • 250 milliliters of olive oil
  • 1 kilo of tomato chopped
  • 1/2 kilo of onion finely chopped
  • 2 heads of Garlic finely chopped
  • 1 bunch of parsley finely chopped
  • 1 can of Chile long
  • 1 jar of olive
  • 1 jar of capers
  • 1 can of Bell pepper
  • 1 kilo of potato peeled, cooked and cut into cubes

    Preparation

    The cod is put to soak in simple and cold water from the day before its preparation; the water in which it is soaked must be changed at least three times in the aforementioned time in order to remove the salty.
    The cod is cooked in clean water with 1/4 kg of onion, at least 30 minutes, until it is soft enough so that it can crumble.
    The cod crumbles and is put in a container.
    In a pan put the olive oil, when hot add the garlic, which when it has begun to brown is added the chopped onion, so that once it has begun to brown, add the parsley and finally the Tomato
    Leave everything to simmer to finish seasoning and then add the cod leaving another 10 minutes in the fire.
    Add the capers, olives and long chiles without the brine.
    Finally the potatoes are added.
    When serving, the peppers are poured to garnish.
