Preheat the oven to 200 ° C.
Wash the fish inside and out.
Fill the fish with aromatic herbs and garlic.
Beat the San Juan® egg white with the water and add salt to make a uniform mixture. (Trying not to be too watery).
Place on a tray larger than fish an anti-stick mat, add a layer of salt about 1 cm thick.
Place the fish on the mixture and cover it with the remaining salt mixture, trying to cover it completely.
Bake 15 minutes or until the crust of salt is firm and golden, avoiding overcooking.
Sauté garlic and Chile in oil and add mushrooms in quarters and sauté them to cook, salsify, remove and reserve.
Break the crust and discard, clean the remaining salt with a kitchen brush.
Remove the fish and mount on a plate, accompany the mushroom with garlic, slices and supreme orange.
