Preparation
For the sweet and sour sauce, heat the pineapple juice in a pot over medium heat and add the honey, sugar, tomato sauce, ground chipotle, hot sauce, season with salt and pepper and cook for 10 minutes or until thick . Chill and reserve.
Season the fish with salt and pepper and cover with flour, egg and crushed Bimbo® crushed bread making sure it is covered completely.
Fry the fish strips in hot oil for 5 minutes or until browned. Drain on absorbent paper to remove excess grease.
Serve the fish strips with the sauce.
