This salmon recipe will be a good way to try this fish, which is a great source of protein, vitamins and minerals. Ingredients

4 portions
  • 1/2 cups caramelized walnut, chopped
  • 1/2 cups pistachio, roasted and chopped
  • 1/2 cups dehydrated cranberry, chopped
  • 1 cup almond, toasted and chopped
  • 1/4 cups butter
  • 1 cup raw sugar, Domino®
  • 1/4 cups white wine
  • 1/4 cups yellow lemon juice
  • 2 tablespoons butter
  • 12 baby carrots
  • 4 salmon, (skinless fillets, 200 gc / u)
  • 1 yellow lemon
  • 1 cup vegetable, of leaf, like lettuce, baby spinach or sprouts
  • 1 beets, sliced
  • enough chili flake, to decorate

Preparation

In a bowl mix the caramelized nut with pistachios, cranberries and almonds.
Heat the butter in a pot over medium heat, add the Domino® Muscovado Sugar, the white wine, the lemon juice and cook the mixture until it caramelizes and thickens.
Heat a large skillet with the butter and cook the carrots with the salmon until they are golden brown, pour the glaze and bathe constantly. Serve on a plate with yellow lemon, leafy vegetables, beet and chili seeds.

PRESENTATION

Serve with glazed carrots, radish, yellow lemon, grated beets and chili flakes.

TIPS

For a good glaze, it is important that the sugar caramelize well and bathe constantly, so you will achieve a unique shine and flavor.
