This is one of the favorite dishes of my childhood. My mother always served it with bread and sometimes I added olives. Since then I love it, it's simple, suitable for any budget, fast, nutritious and delicious.

Preparation
Heat the oil and fry the finely chopped garlic and onion.
Add the chopped parsley.
Blend the tomato with very little water and add to the sofrito with the tomato puree, wait for it to boil.
