  • 1/2 cups oats, ground for pancakes

  • 1 teaspoon cumin powder, for the pancakes
  • 1 egg, for the pancakes
  • 2 tablespoons fresh coriander, finely chopped for pancakes
  • to taste salt, for the pancakes
  • to taste black pepper, for the pancakes
  • 3 tablespoons oil, for the pancakes
  • 1 cup Cauliflower Eva® Bits, 454 grams
  • enough Water, hot for dressing
  • to taste salt, for the dressing
  • 1 cup sour cream, for the dressing
  • 1/4 cups milk, for the dressing
  • 1 clove garlic, for the dressing
  • 3 tablespoons chipotle chili, in marinade for dressing
  • 1 tablespoon lemon juice, for the dressing
  • to taste salt, for the dressing
  • to taste black pepper, for the dressing
  • enough fresh coriander, To accompany

Preparation

For the pancakes, mix the onion, California Eva Bits, oatmeal, garlic powder, cumin, egg, coriander, salt and pepper in a bowl until completely incorporated. With the help of your hands, form pancakes until the mixture is finished. Reservation.
In a pan with oil, cook the pancakes over medium heat, drain to remove excess fat. Reservation.

Serve the pancakes with creamy chipotle dressing, decorate with coriander leaves. Enjoy
