Ingredients

6 portions
  • 8 cups Water
  • 3 plantain, ripe with peel
  • 3 tablespoons flour
  • 1/2 cups refried beans
  • 1 cup vegetal oil
  • 1/2 cups green tomato
  • 1 clove garlic
  • 2 Green Chiles
  • 1 tablespoon onion, finely chopped
  • 3 pinches salt

Preparation

Heat the water and cook the bananas with everything and peel for 25 minutes. Remove the bananas from the water; let cool, remove the skin and crush to a puree.
Mix the banana puree with the flour and rest for 5 minutes. Form the pancakes and fill with the refried beans.
Heat the oil in the pan over medium heat and fry the banana pancakes one at a time until they are golden brown and remove the excess fat.
Blend the tomato, garlic, chili and season. Serve in a sauceboat and add the chopped onion.
Serve the pancakes with salsa and enjoy.
