Vegan Meatballs with Mushroom Sauce

If you rarely find easy vegan recipes, we have a wide variety of options for you and to try traditional recipes but with delicious ingredients. Prepare this recipe for Vegan Meatballs with Mushroom Sauce, which are made of lentils and rice and served with a rich sauce. Remember that lentils and rice help to unify the preparation and are key ingredients for vegan recipes. In addition, the panko helps improve consistency because it removes excess moisture.

Ingredients

4 servings
  • 2 cups of lentil cooked
  • 2 spoonfuls of coriander
  • 1/4 of Cup of oats
  • 1 Cup of White rice Cooked
  • 2 spoonfuls of panko bread crumbs
  • 1 tablespoon of onion powder
  • 1 tablespoon of cumin
  • enough of olive oil
  • 1/3 of Cup of onion chopped, for the sauce
  • 1 tablespoon of garlic chopped, for the sauce
  • 2 cups of mushroom in quarters, for the sauce
  • 2 cups of soy milk for the sauce
  • 1/4 of Cup of White wine for the sauce
  • 1 branch of thyme for the sauce
  • enough of fresh thyme to decorate

    Preparation

    For the meatballs, in a food processor, process the lentils with cilantro and oats.
    Mix the previous preparation with rice, panko, onion powder, cumin, season with salt and pepper. Form with the help of your hands the meatballs.
    In a pan over medium heat cook the meatballs with a little olive oil until golden brown.Set aside.
    For the sauce: in a skillet over medium heat, heat a tablespoon of olive oil and fry the onion, garlic and mushrooms until softened. Add the soy milk, white wine and thyme, cook for 5 minutes. Remove and cool slightly.
    Blend the previous preparation, pour into a pot and cook for 10 minutes until it has a thick consistency.
    On a plate serve the meatballs with the mushroom sauce, decorate with fresh thyme.

    PRESENTATION

    On a deep dish, decorated with fresh thyme, accompanied by rustic bread and a refreshing drink.

    TIPS

    The lentils and the rice help to unify the preparation, the panko helps to improve the consistency because it eliminates the excess of humidity.
