Vegan Meatballs with Mushroom Sauce

Prepare this recipe for Vegan Meatballs with Mushroom Sauce, which are made of lentils and rice and served with a rich sauce.   • 2 cups lentil, cooked
  • 2 tablespoons fresh coriander
  • 1/4 cups oats
  • 1 cup White rice, Cooked
  • 2 tablespoons panko bread crumbs
  • 1 tablespoon onion powder
  • 1 tablespoon cumin
  • enough olive oil
  • 1/3 cups onion, chopped, for the sauce
  • 1 tablespoon garlic, chopped, for the sauce
  • 2 cups mushroom, in quarters, for the sauce
  • 2 cups soy milk, for the sauce
  • 1/4 cups white wine, for the sauce
  • 1 branch thyme, for the sauce
  • enough fresh thyme, to decorate


For the meatballs, in a food processor, process the lentils with cilantro and oats.
Mix the previous preparation with rice, panko, onion powder, cumin, season with salt and pepper. Form with the help of your hands the meatballs.
In a pan over medium heat cook the meatballs with a little olive oil until golden brown.Set aside.
For the sauce: in a skillet over medium heat, heat a tablespoon of olive oil and fry the onion, garlic and mushrooms until softened. Add the soy milk, white wine and thyme, cook for 5 minutes. Remove and cool slightly.
Blend the previous preparation, pour into a pot and cook for 10 minutes until it has a thick consistency.
On a plate serve the meatballs with the mushroom sauce, decorate with fresh thyme.


On a deep dish, decorated with fresh thyme, accompanied by rustic bread and a refreshing drink.


The lentils and the rice help to unify the preparation, the panko helps to improve the consistency because it eliminates the excess of humidity.

La receta es muy fácil de hacer. Me gusto mucho la consistencia, el sabor, todo! Mi único comentario es que en el texto de la receta se indica 1 cucharada de comino. Como no soy fanática del comino, yo solo le puse un poquito. Cuando volví a ver el video, ahí dice 1 cucharadita de comino. Deliciosas albóndigas!
