The quesadillas with spinach and portobello mushroom are a gourmet way to serve traditional Mexican quesadillas.

Ingredients

6 portions
  • 500 grams spinach, cut
  • 2 cups manchego cheese, grated
  • 300 grams Portobello mushroom, sliced
  • 1 clove garlic
  • enough oil
  • 12 flour tortillas

Preparation

In a pan put a little oil, add the mushrooms and sauté them. At the end add the spinach sauté for 1 minute more. (If there is water in the pan, remove it.)
Add to the cheese and mix well until the cheese is melted.
Heat the tortillas and add the mixture. Close like quesadillas and serve.
