Preparation
In a pot add the oil and heat over low heat. Fry the onion, garlic and tomato for 5 minutes and add the brains. Cook for 10 minutes, covered.
Add the epazote, salt and pepper and cook for another 10 minutes or until all the liquid is lost. Reservation.
On the tortillas, add two teaspoons of filling and close with two toothpicks. Reservation.
Heat enough oil in a saucepan to brown the quesadillas. When the oil is hot add them and let them brown for 5 minutes. Remove them from the oil and drain on absorbent paper.
Serve in a wooden bowl and accompany them with a delicious guacamole.
