Enjoy all the flavor of your mom's food with this fast and traditional recipe. Fried sausage in a green sauce with chips. It is ideal at lunchtime for your whole family, served with rice and fresh water.

Ingredients

6 portions
  • 2 tablespoons oil
  • 1 kilo longaniza sausage, cut into pieces
  • enough Water
  • 4 potatoes, peeled and cut into cubes
  • 1 kilo green tomato, for the sauce
  • 4 serrano peppers, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 branch fresh coriander, for the sauce
  • 2 tablespoons oil, for the sauce
  • to taste salt and pepper

Preparation

In a skillet over medium heat heat the oil and fry the sausage until golden brown. Remove excess fat and reserve.
In a saucepan over medium heat with boiling water, cook the potatoes with salt, until they are soft. Drain and reserve.
In a saucepan over medium heat, boil the tomatoes in water with the chiles, onion, garlic and cilantro for about 20 minutes. Drain
Blend the vegetables until you get a smooth sauce. Strain if necessary.
In a saucepan, heat the oil over medium heat, pour the sauce and cook 10 minutes more, season with salt and pepper.
Add the sausage and potatoes to the sauce, add seasoning and cook for 5 more minutes over low heat.
Serve hot with beans and rice.

PRESENTATION

On a plate, serve with beans from the pot, rice and tortillas.

TIPS

Cook the tomatoes very well, otherwise the sauce will be very acidic.
