Ingredients

  • 2.75 kilos of pork meat in cubes
  • 1/4 of Cup of vegetable oil
  • 2 onions big
  • 6 cloves of garlic chopped
  • 1 teaspoonful of sea ​​salt
  • to taste of ground pepper
  • 1 tablespoon of ground cumin
  • 4.25 liters of chicken soup
  • 8 poblano peppers fresh without seeds and chopped
  • 4 jalapeno Peppers fresh seedless and chopped
  • 2 bell pepper seedless and chopped
  • 1.35 kilos of tomatillo frscos without shell
  • 1 bunch of coriander chopped

    Preparation

    In a large pot with high heat, seal the meat in the vegetable oil until it turns golden brown.
    Remove the meat from the pot and leave 2 tablespoons of oil in it.
    Add the onion and garlic, season with salt and pepper, and cook until the onion has settled.
    Add the cumin and then the chicken broth.
    Finally, return the meat to the pot.
    Cook over low heat for 30 minutes.
    Add poblano peppers, jalapeños and primientos.
    Blend the tomatoes and cilantro and pour over the stew.
    Cook on low heat for 30 to 45 minutes more.

    consejo siempre que cocino carne de puerco me gusta cocerla en agua con sal, tomillo ajo,cebolla y mejorana y despues freirla. esto resalta más el sabor de la carne.
