This dish of tartar meat is prepared with raw meat seasoned with capers, mustards and other ingredients. It is really a delicacy and you can serve it on toasted gourmet biscuits!

Preparation
Chop the meat with a knife or in a food processor to finely chop it. Put it in a glass bowl.
Peel and chop the cambric onions very finely.
Chop the gherkins and capers finely and add everything to the meat bowl.
Mix everything with a wooden spoon. Add the chopped onions and pickles and mix well.
Make four piles of meat (you can use a mold of souffle to mold them) and serve each one on a plate.
In the top of the little pile of meat of each dish, make a hole and put an egg yolk.
Serve it with toasted bread.
