Preheat the oven to 200 ° C and place the potatoes on a baking sheet. Cook for 40-50 minutes.
When they are ready, remove from the oven (you should not over cook).
With a kitchen towel, take the potatoes and make a vertical cut. Remove the pulp from the potato and pass through a grinder to puree. Repeat with the rest of the potatoes.
Put a little flour on a clean and flat surface and form a mound with the ground potato. Create a hole in the center.
Add the beaten eggs, nutmeg, salt and parmesan cheese powder to the center of the potatoes and stir with your hands.
Take half the flour and put on top. With the hands (without kneading a lot) incorporate the dough. Add a little more flour and knead again (no more than 2 minutes to avoid the gnocchi leaving hard).
Once you have a slightly sticky but uniform dough, take a little and form little tubes with the palms of your hands.
With a knife or plastic stick, cut the gnocchi and put on a tray with flour. Repeat with the whole mass.
To cook the gnocchi, boil a pot with salt water and gradually put the gnocchi in the water. The gnocchi should float when they are ready and you can take them out with a spoon with holes.
Serve with the sauce of your choice.
