Ingredients

6 servings
  • 1 package of penne pasta
  • 2 cups of cherry tomato
  • 2 cups of fresh spinach chopped
  • 3 spoonfuls of olive oil
  • 2 cloves of garlic
  • 1/2 Cup of Parmesan cheese grated
  • 1/2 tablespoon of Italian spice or oregano

    Preparation

    Boil a large pot with water and salt. When it is boiling cook the pasta according to the instructions of the same making sure it is al dente.
    While the pasta is cooking, heat the olive oil in a pan over medium heat. Add the crushed garlic and brown for 3 minutes.
    Add the spinach and cook until well cooked and reduced in size.
    Add the cherry tomatoes cut into quarters and the spices and cook for 3 more minutes.
    Add the pasta to the sauce, mix well and add the Parmesan cheese. Pour into a deep bowl to serve.

    PRESENTATION

    Garnish with cherry tomatoes, fresh spinach leaves and Parmesan cheese.

    TIPS

    Al dente means that the pasta is at its point.
