Ingredients

4 portions
  • 2 1/2 cups penne pasta
  • 1 teaspoon salt, (for pasta)
  • 2 tablespoons butter, (for the sauce)
  • 1/4 onions, finely chopped (for sauce)
  • 1 clove garlic, finely chopped (for the sauce)
  • 2 tablespoons flour, (for the sauce)
  • 4 cups milk, cold (for sauce)
  • 1 cup manchego cheese, grated (for sauce)
  • 1/2 teaspoons salt, (for the sauce)
  • 1/4 teaspoons black pepper, (for the sauce)
  • 4 chicken breasts, without bone and without skin
  • 1/2 teaspoons salt, for breasts
  • 1/4 teaspoons black pepper, for breasts
  • 4 tablespoons oil
  • 2 twigs basil, roughly chopped (to decorate)

Preparation

In a saucepan, heat water and add salt and pasta. Cook until it is al dente. Drain and reserve.
For the sauce, in a pot over low heat melt the butter and sauté the onion and garlic. Add the flour and cook until golden brown. Add the milk and mix. Cook over low heat until it begins to thicken without stopping to move, about 20 minutes. Add the cheese and mix until incorporated. Season with salt and pepper.
Add the sauce to the pasta and mix well. Reserve.
For the breasts, salt and pepper each breast and fry in a grill pan with oil on both sides until they are cooked. Cut into thick strips.
Serve the pasta with the breasts and garnish with fresh basil.

PRESENTATION

Place the paste on a deep plate and add chicken strips on the grill and garnish with fresh basil.

TIPS

When you make creamy sauces that have flour, make sure you cook them over low heat to avoid lumps and remove the taste of raw flour.
