Ingredients

4 servings
  • 250 grams of kale cut into small pieces
  • 150 grams of quinoa cooked and drained
  • 3 peaches cut into small segments
  • 4 spoonfuls of sunflower seed Toasted and unshelled
  • 1/4 of red onion filleted
  • 5 spoonfuls of parsley finely chopped
  • 1/2 Cup of cranberry
  • 2 spoonfuls of balsamic vinegar
  • 1/2 Cup of extra virgin olive oil
  • 4 spoonfuls of honey
  • 1 teaspoonful of ground pepper

Preparation

In a bowl, mix the kale, quinoa, peaches, sunflower seeds, onion, parsley and blueberries.
In another bowl, add the vinegar, salt, pepper, honey and olive oil. Stir very well to emulsify the vinaigrette.
Bathe with this dressing the salad.

Es la lechuga, es una chinita, pero en mis ensaladas a mi me gusta combinar la espinaca con lechuga orejona, o la morada y hay mas variedades aquí en México.
