Preparation
In a deep bowl mix the soy sauce, water, vinegar and salt.
Heat 1 tablespoon of oil in a large skillet over medium heat (if you have a better wok). Add the shrimp and cook for 4-5 minutes. Remove from the pan.
Heat 2 tablespoons of oil and cook the egg for 30 seconds, add the onion and ginger and cook for 1 minute more.
Add the soy sauce, the shrimp, the rice and the peas and cook for 3-4 minutes. It serves.
