Prepare a creamy sweet potato rice with pieces of pork bacon, with this easy-to-make recipe. This is an easy and delicious garnish for any occasion, which gives an irresistible contrast to your meals and the classic rice. It is very important that you add the broth in three parts, so that the cooking is even and slow. You can also add some whipping cream, to make it creamier.

Ingredients

8 portions
  • 3 orange sweet potato, peeled and diced
  • enough Water
  • enough salt
  • 1/4 teaspoons nutmeg
  • 1/4 teaspoons paprika
  • 1 pinch black pepper
  • 1 cup whipping cream
  • 1 cup bacon, minced FUD® pork
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 cups white rice, soaked and drained
  • 4 cups chicken soup
  • 1 twig fresh rosemary
  • enough parmesan cheese, to decorate
  • enough bacon, FUD® pork chopped and fried, to decorate
  • enough rosemary, to decorate

Preparation

In a pot with boiling water and salt, cook the sweet potato for 10 minutes or until it is smooth. Remove and drain.
In a food processor, process the sweet potato with nutmeg, paprika, salt, pepper and whipping cream, until a smooth puree is obtained.
In a deep skillet and over medium heat, cook the FUD® pork bacon until golden brown. Add the onion and garlic, cook 1 minute and add the rice. Fry for 5 minutes or until it starts to turn golden brown.
Add the sweet potato mash, integrate well and fill with a third of the broth. Lower the heat and cook 10 minutes.
Add another third of the broth and let it evaporate slowly. Add the rosemary, salt and pepper. Once the liquid is almost consumed, refill with the rest. Cook until the rice is cooked.
Serve immediately, decorate with more fried bacon, parmesan and fresh rosemary.

PRESENTATION

It is decorated with parmesan cheese, bacon and rosemary.

TIPS

The broth is added in 3 parts so that the cooking is even and slow. You can add some whipping cream, to make it creamier.
