Ingredients

10 portions
  • 1 kilo puff pastry
  • 1 kilo Spinach "La Huerta"
  • 3/4 cups cottage cheese
  • 250 grams manchego cheese
  • 1 cup cream
  • 100 grams bacon
  • 2 tablespoons butter
  • 100 grams onion
  • 1 egg

Preparation

Chop the onion and bacon.
In a pan brown the bacon , once it is ready, add the onion until it is smooth.
Add the spinach "La Huerta" to the pan, season with salt and pepper to taste, cook for about 3 minutes and reserve.
Extend the puff pastry to form two boxes of approx. 30 cm
Put the spinach mixture with onion and bacon on the puff pastry.
Add the cottage cheese and Manchego cheese on top.
With a knife, strips are made inclined on the edges of the puff pastry to be able to braid it.
Braid the puff pastry by placing one strip over the other from side to side.
Brush the strudel with the egg.
Bake at 200ºC for 15 minutes.
Remove from the oven and serve with cream to the chipotle.
