Prepare the sablé dough: pour the butter, sugar, egg, and salt into the food processor. Beat lightly, add the flour all at once, and mix for a few more seconds. (It can also be prepared by hand). Pour the dough onto a cold surface, preferably marble, and knead with the palms of your hands until it becomes homogeneous. This operation should be done quickly, so the dough does not heat up. Place it in the refrigerator and chill for 30 minutes.
