Grilled Lettuce Hearts with Spicy Shrimp

You've never tasted like lettuce hearts like these! Delicious grilled lettuce hearts, accompanied by picositos shrimp with habanero and an orange vinaigrette that makes an irresistible contrast.

  • 1 package Eva® Rustic Lettuce Heart, 4 pieces
  • 2 tablespoons olive oil
  • 4 pinches salt
  • 2 tablespoons butter
  • 1 shallot, finely chopped
  • 2 tomatoes, in cubes
  • 2 cups pink shrimp
  • 2 Habanero chiles
  • 1 teaspoon oregano
  • 1/2 teaspoons paprika
  • 1 teaspoon salt
  • 1/4 teaspoons pepper
  • 1/4 cups white vinegar
  • 1/2 cups orange juice
  • 1 tablespoon old style mustard
  • 2 tablespoons raw sugar
  • 1 teaspoon chile seeds
  • 1 teaspoon salt
  • 1/4 teaspoons white pepper
  • 3/4 cups olive oil
  • 2 tablespoons guajillo chile, in hoops
  • 1 tablespoon parsley, fried

  • Cut the Eva® rustic lettuce hearts in half. Add olive oil and salt.
  • Heat a grill pan on high heat very well, and grate the hearts on both sides for about 5 to 7 minutes or until marked. Reservation.
  • For the filling, in a pan over medium heat heat the butter and cook the shallot a few minutes. Add the tomato, shrimp, habanero pepper and spices. Cook about 5 minutes or until the flavors are integrated. Season with salt and pepper. Reservation.
  • For the vinaigrette, in a bowl, combine the vinegar with orange juice, mustard, sugar, chili seeds, salt and pepper. Add the olive oil in the form of thread until completely emulsified. Reservation.
  • Serve hearts grilled with a little shrimp on top. Add the vinaigrette and decorate with guajillo chile rings and fried parsley.
