  • 1 white onion, cut into pieces
  • 2 cloves garlic, cut into pieces
  • 8 tomatillos, Cut in half
  • 4 serrano chiles, deveined
  • 1 tablespoon cumin, whole

  • 2 egg yolks
  • 3 cups chicken breast, cooked and shredded

  • For the green sauce, heat a skillet over medium heat with a teaspoon of oil, fry the onion with the garlic until browned and add the tomatoes. Cook until they change color, add the chilies, cumin, season with salt and pepper, fill with the chicken broth and cook for about 10 minutes. Remove from cooking and blend with cilantro until a smooth sauce is obtained.
  • In a bowl beat the egg whites until they begin to peak, add a little salt. Add the yolks one by one while continuing to beat. Add the chicken and mix in folding manner.
  • With the help of 2 spoons, form patties and cook in a pan over low heat and a little cooking spray. When they are done, remove and reserve.
  • Heat the sauce in a skillet over medium heat and bring and when it boils, add the patties. Season with salt and pepper, cook a few minutes and serve with Cotija cheese and fresh coriander.
