Make the paste for the cake by mixing the flour, the salt, the beaten egg, 1 1/2 tablespoon of olive oil, 6 tablespoons of butter and the cold milk in the processor. Put the pasta in the refrigerator for 30 minutes.
Preheat the oven to 180 centigrade (350 Fahrenheit) Extend the pasta and place it in a cake mold. Bake 10 minutes with beans (so you do not lose shape). Remove the beans and put parmesan cheese. Bake about 15 more minutes until golden brown.
Put the oil in a pan and season the pore. Add the onions and sauté about 25 minutes. Season with salt and pepper and place on the cake. Add the beaten egg and the grated gruyere cheese. Bake 15 minutes and serve hot.
