Preparation
Cut the onion into small squares. Slice the mushrooms and chop the spinach.
Cut the top of the red peppers to remove the lid (keep them). Clean the interior of these very well. Varnish the outside of the peppers with olive oil.
Add olive oil to a pan and add the onion, once transparent, add the mushrooms and spinach. Cook for 5 minutes.
Once the previous mixture has cooled, place it in a bowl and pour the egg whites. Add salt, pepper and the Italian mix of spices to this mixture. Beat very well.
Place the peppers on a previously greased baking sheet. Pour with the help of a spoon, the mixture of whites inside the peppers. Bake for 30 minutes at 180 degrees.
