This is a 100% Mexican breakfast, it is a combination of the starry eggs with one of the richest sauces we have in Mexico: El Pico de Gallo. We finish this delicious dish with a big spoonful of black beans that will provide all the necessary flavor to this DELICIOUS recipe.

Ingredients

3 portions
  • 3 Tía Rosa® wheat flour tortillas
  • 6 eggs
  • 2 tomatoes, without seed and finely chopped
  • 1/8 onions, finely chopped
  • 2 jalapeno Peppers, finely chopped
  • 180 grams black bean, Cooked
  • 3 pinches salt
  • 2 pinches ground pepper
  • 50 milliliters vegetal oil

Preparation

Fry the onion, the tomato and the chili, season and reserve.
Heat oil in a pan, break the eggs taking care not to break the yolk, salt and pepper and cook.
Put the eggs on the Tía Rosa® Tortillinas®, and it's on the hot black beans.
Finish around the sauce.

PRESENTATION

Serve two fried eggs on a Tía Rosa® Tortillinas® and surround with your fried tricolor sauce.

TIPS

You can add fried bacon beans to your beans, this will give them a special flavor.
