Preparation
Heat 1/2 tablespoon of olive oil in a pan over medium heat and cook the onion until lightly browned. Add the pepper and cook 1 more minute. Add the mushrooms and cook for 3 more minutes. Add the tomato and season with salt and pepper. Remove from heat but keep warm.
In a deep bowl beat the eggs, whites, salt and pepper with a balloon whisk for 1 minute.
In the pan place 1/2 tablespoon of olive oil and 1/2 tablespoon of butter over medium heat. Pour the egg mixture and let it cook for 2 minutes. With a spatula, slightly separate the omelet from the pan and allow it to continue cooking for 4-5 more minutes.
With a spoon place the filling that was prepared on the half of the omelet and on the same the manchego cheese. With the spatula, close the omelet and allow it to cook until the cheese is melted.
Remove from the pan and serve.
