Cut the onion into small squares, place the onion cut in a pan and add a tablespoon of olive oil and a spoonful of water.
Add spinach and cheese to skillet. Salt and pepper to taste.
Add to the eggs a spoonful of skim milk and beat them. Add salt and pepper to taste.
Add the mixture of the eggs to the pan where the other ingredients are.
Flip the omelette when the bottom begins to rise.
Serve on a plate and for decoration add parsley and chopped watercress.
