Ingredients

4 portions
  • 5 eggs
  • 3 potatoes, or potatoes
  • 1 onion
  • 1 red pepper
  • 250 grams sausage
  • 1/2 glasses olive oil
  • 3 cloves garlic, optional

Preparation

Chop onions in small boxes.
Clean the pepper, remove the stem and cut it into strips; Cut the chorizo ​​into small slices
Peel and clean the potatoes, cut them into small squares 1/2 centimeters. (You can stand 20 minutes in water to eliminate the starch)
Place the onion in the pan until the potatoes crystallize, season to taste and fry over low heat for 25-30 minutes.
Beat the eggs, place them in a large bowl, remove them to your liking, add the potatoes together with the pepper or chorizo ​​and mix well.
Separate the edges, cover the pan with a plate of larger diameter than the pan and turn it over.
Put the pan back on the fire, add a splash of the reserved oil and add the mixture. Wait (20 seconds) to start curdling for 10 minutes approx.
It serves.

PRESENTATION

In slices for garnish or in medium squares for snacks.

TIPS

Remove the mixture constantly so that the potatoes brown. Add 2 extra eggs per number of potatoes.
