Ingredients: water, for the sauce; 1 kilo tomatillo, in half, for the sauce; 1/2 onions, for the sauce; 3 morita chiles, without tail, for the sauce; 2 cloves garlic, without skin, roasted, for the sauce; 1/2 bunches cilantro, for the sauce; 2 tablespoons vegetable oil, for the sauce; 2 cups beef broth, for the sauce; salt, for seasoning; pepper, for seasoning; 3 cups skirt steak, cooked and shredded; 1/2 cups flour; 1/2 cups onion, finely chopped; 3 tablespoons cilantro, finely chopped; 4 egg whites; 4 egg yolks; vegetable oil, for frying; queso fresco, crumbled, for serving

Boil water in a pot and cook the tomatoes, onion, and morita chile until they change color. Drain and blend with roasted garlic, cilantro, salt, and pepper until you obtain a homogeneous consistency. Pour enough vegetable oil into a pot and add the blended sauce, add the beef broth, and cook over medium heat until you obtain a semi-thick consistency. Keep warm.
