Preheat the oven to 190ºC. In a saucepan, sauté the onion with the butter, garlic, celery, carrot, and shallot. Cook for 5 minutes and season with pepper and Worcestershire sauce. Add the ketchup and cook for 1 minute, stirring constantly.
