Bring two cups of water to a boil with the onion, salt, and carrots. Add the chicken, cover, and cook for 15 minutes or until the chicken is fully cooked. Remove the chicken from the pot, place it in a container, and allow it to cool. Cut into thick cubes. Discard the vegetables left in the pot.
