In a saucepan, a little butter is heated, and the chopped onion is sautéed. The cleaned and chopped huitlacoche is added and seasoned with salt. It is left to cook until it releases all its juice. The flattened chicken breasts are stuffed with huitlacoche and secured with a toothpick. The rolls are fried in butter until golden brown.
