Ingredients: 200 grams gorgonzola cheese; 4 beef tenderloins, 400 gr approx; 3 shallots; 1 cup whipping cream; 400 milliliters dry white wine; 1 teaspoon butter; 1 teaspoon vegetable oil

Cut the fillets into 3 portions. Sear them in a hot pan with oil and butter, doing it quickly just to brown them, then remove them. Next, lower the heat and sauté the shallots, adding wine with salt and pepper. Return the fillets to the pan with the wine sauce and simmer for about 20 minutes or until the meat absorbs the wine and is cooked to your desired doneness. Adjust the salt.
