Ingredients

6 servings
  • 1 kilo of rosemary
  • 1 pinch of Salt
  • 6 nopales
  • 14 guajillo chili peppers
  • 3 ancho chili peppers
  • 1 clove of garlic
  • 2 tomatoes
  • 1 onion grilled
  • 100 grams of lard
  • 500 grams of cambray potato Cooked
  • 150 grams of Dry shrimp
  • 250 grams of shrimp shoddy
  • 2 eggs for the pancakes
  • 100 grams of Dry shrimp ground
  • 10 grams of ground bread
  • 150 milliliters of vegetable oil

Preparation

Clean the romeritos with enough water, looking to remove the land they commonly bring. Cook in a pot with enough water (which covers the romeritos) and salt. Once cooked (change color), drain and reserve.
Cut the nopales into cubes, cook them in a pot with enough water and salt for 10 minutes. Once cooked, drain them.
For the sauce: roast the chiles in a comal at high temperature for 5 minutes, once they change color, soak them in hot water until they are soft.
Roast the garlic with the tomato and onion in a comal at high temperature. Always move them until the shell is burned.
Blend the chilies with the garlic, tomato, onion and a little water, make sure the sauce is well ground.
Heat the butter and fry the sauce for 10 minutes, add the romeritos, the nopales, the potatoes (previously cooked) and the shrimp (fresh and dry). Season
For the pancakes, whisk the egg whites to the point of nougat, add the yolks, the shrimp powder and the ground bread.
Form the pancakes and fry in hot oil until golden brown on both sides. Drain on absorbent paper to remove excess fat and incorporate the pancakes into the preparation. It serves.

PRESENTATION

Accompany your romeritos with bread or some pasta.

TIPS

Before incorporating the dried shrimp into the sauce, remove the eyes.

A través de iOS No te ofendas, para mi los tradicionales desde niña hechos por la bisabuela son con camarón seco y un buen mole... Mas los nopales y las papitas con tortitas de camarón...
