This chocolate cake with cauliflower is ideal to lower your carbohydrate intake, as it has little flour and complements perfectly with these Cauliflower Eva® Bits, which give the perfect consistency and moisture to the cake. Do not stop trying!

Ingredients

8 portions
  • 283 grams bittersweet chocolate, in pieces
  • 3/4 cups butter, in pieces
  • 3/4 cups sugar
  • 3 teaspoons liquid vanilla
  • 6 egg yolks
  • 4 egg whites
  • 1 pinch salt
  • 1/4 cups wheat flour, sifted
  • 2 cups Cauliflower Eva® Bits
  • 1 cup whipping cream, for bitumen
  • 2 cups bitter chocolate, for bitumen
  • to taste strawberry, cut into quarters, to decorate
  • to taste berry, to decorate
  • to taste Chocolate chips, white, to decorate

Preparation

Preheat the oven to 150 ° C.
Heat a small pot over medium heat and melt the chocolate with the butter, add the sugar and vanilla. Mix until incorporated. Cool slightly
Beat the yolks in the blender until fluff. Mix in an enveloping form the previous preparation and reserve.
In another bowl, whisk the egg whites until it forms soft peaks and integrally surround the mixture of yolks. Add the flour and Cauliflower Eva® Bits taking care not to lower the mixture too much.
Pour the mixture into a greased and floured mold, bake for 35 to 45 minutes or until well cooked. Chills and releases.
For the bitumen, heat the cream to beat and mix with the chocolate until it integrates. Chill and freeze 20 minutes. Beat at high speed until it forms smooth peaks.
Cover the cake with the chocolate bitumen and decorate with strawberries, blueberries and chocolate shavings.

PRESENTATION

Decorate with red berries and white chocolate shavings.

TIPS

The cooking is slow and at low temperature, since the cauliflower brings a lot of moisture to the recipe.
