Ingredients

8 portions
  • 250 grams flour
  • 125 grams butter
  • 100 grams powdered sugar
  • 40 grams egg yolk
  • 50 grams egg
  • 1 gram salt
  • 125 grams lyncott cream
  • 150 grams bittersweet chocolate, chopped
  • 120 grams mashed banana
  • 1 teaspoon instant coffee
  • 15 grams butter
  • 2 bananas, sautéed in rum
  • 170 grams mashed banana
  • 15 grams lemon juice
  • 250 grams custard cream
  • 8 grams gelatin, hydrated
  • 200 grams Meringue, Italian

Preparation

Preheat the oven to 180 ° C
With the first 6 ingredients we will make the base of the cake. Mix and chop the butter with the flour with a spatula until it is perfectly integrated, add egg yolks, egg and salt until perfectly integrated.
Grease cake mold of 22 cm and place the dough we have made, bake at 180 ° C for 15 - 18 min, remove and cool.
With the following 5 ingredients we will make a ganache. Heat the cream until it boils and dissolve the coffee, pour this preparation over the chopped chocolate and stir to melt, add the butter and the banana puree. We will pour this mixture over the baked cake and return to the refrigerator.
And now with the last ingredients we will make a banana mousse. We mix perfectly the puree, the lemon juice and the pastry cream with the help of a miserable one, in an enveloping way we add in Italian meringue and finally the melted grenetina.
Grease an 18 cm ring with oil and icing sugar. Place plastic paper or aluminum foil on the bottom and pour the mixture of the mousse, refrigerate until it is curdled and unmold.
Remove the cake from the refrigerator, place the banana mousse on the chocolate and coffee ganache and decorate.

PRESENTATION

Decorate with slices of lemon and raspberries.
