Ingredients

10 portions
  • 2 packages Classic Gamesa® Cookies Ricanelas, for the cake base
  • 1/2 cups butter, in cubes, for the cake base
  • 1 1/2 kilos apple, peeled and cubed, for the jam
  • 150 grams low calorie sugar, for the jam
  • 50 grams raw sugar, for the jam
  • 1/4 cups water, for the jam
  • 1 raja cinnamon, for the jam
  • 2 tablespoons lime juice, for the jam
  • 4 apples, in thin slices, for the cake
  • 1 tablespoon low calorie sugar, for the cake
  • 1 tablespoon cinnamon powder, for the cake
  • vanilla ice cream

Preparation

In a processor, crush the Cookies Ricanelas de Gamesa® Clásicas for 5 minutes until they become powder. Add the butter and let it form a dough. Place in a bowl, cover with plastic and reserve.
In a pot, cook the apples with the low-calorie sugar, muscovado sugar, water, lemon juice and the cinnamon stick over medium heat for 30 minutes, until they form a jam and the liquid is reduced. Let cool and reserve.
Form a layer approximately one centimeter thick with the Gamesa® Classic Cookies Ricanelas cookie dough in a mold previously varnished with butter and sprinkled with flour. Reserve in refrigeration for 1 hour.
Take the base out of the refrigeration cake and add the jam already cold, cover the entire base with it. Then place the apple slices starting from the outside, overlapping them and forming a flower.
Sprinkle with low calorie sugar and cinnamon
Bake for 15 minutes at 180 ° C, or until the cake is golden brown. Let stand on a rack.
Serve in an extended plate and accompany with vanilla ice cream.
