Set aside two whole strawberries for decoration and slice the remaining 6 strawberries thinly. In a plate, mix the sliced strawberries with sugar and lemon, and let it rest for 5 to 10 minutes until they release their juice, stirring occasionally. Using a bread knife, cut the donuts in half crosswise so that you have 6 half donuts to create a sort of sandwich. In a small bowl, place the cream (it should be very cold to be thick) and whisk with a whisk for 1 minute along with the vanilla extract. Assemble your cakes in layers: place one half of a donut on the plate, then spread a layer of cream, add a light layer of the strawberry mixture, then another half of the donut, cream, strawberries, and finish with the third half of the donut, decorating with a whole strawberry. Repeat the procedure to assemble the second cake.
